I look forward to Easter every year! It’s the holiday I host for family and I like that the emphasis (for our family at least) is simple gathering and great food. No extra fuss necessary for presents, wrapping, etc – just come, hang out – eat, drink and be merry.
I usually carry over some things from year to year but always include something new on the table. This year I switched up the whole menu and it was not only delicious, but easy and hassle free which is (IMO) always the goal when entertaining so that I can focus on enjoying the company.
Here’s the rundown of what I served:
App
Charcuterie board (no recipe – make to your hearts desire)
Main
Kale & Krunches Roast Turkey – but I subbed for chicken
Oven roasted baby potatoes with my favourite farm boy mesquite seasoning
The best Caesar salad with homemade croutons (left over sourdough bits, olive oil & italian seasoning), bacon, parm, & with the best homemade dressing
Dessert
Mouth watering Lemon blueberry cake (another insta find) with Magnolia buttercream icing
Homemade peanut butter eggs but with regular flour because I couldn’t find my Almond Flour
Judging by the lack of leftovers and all the empty dinner wear, I feel like it was another Easter success and am happily adding all of these new-to-me recipes to the rotation since all were a hit and the Roast Turkey-sub chicken recipe was already asked to be shared!
